I think I've narrowed the problem.

In order to make evolution crash, I have to:

edit and account, change incoming mail IMAP server to another server, close
evolution, open evolution, write a new mail, then send   ->  crash !
(with Sent mail redirected to INCOMING of IMAP server)

Evolution stop crashing if I change redirection of Sent mails to default, then
reset it to INCOMING of IMAP server, then restart evolution.
