I changed the preferences to enable the "% CPU" field and I then moved the
location of the column. After closing and restarting gnome-system-monitor,
Preferences showed the CPU field disabled as it had been before I edited the
settings. This applies to all other Process Field settings. It seems that
gnome-system-tools reverts back to the defaults each time the program is restarted. 

I am running Ubuntu Hoary.
