As said before totem with gstreamer0.10 has no subtitle nor menu feature, so you can't change the track, language, etc, that's known and being worked upstream. There is bug #27951 about that -- Totem refuses to play DVDs in some situations with Dapper https://launchpad.net/bugs/41335
