Am easy workaround is to open the properties of the vfolder and rename
it there.

in gnome bugzilla somebody wrote that there is a patch available in
"evolution-patcher", but no details...

(and compared with the big dancing, jumping and flying other bugs in
Evolution this bug is minor in mine opinion, too :D )
