I suceeded to install dapper directly as server (not update path via
breezy) and then upgrading to ubuntu-desktop via network install. I
signed an e-mail and it worked. evolution even automagically selected
the valid key from my keychain (i hadn't to select a key manually). So
it seems to be the seahorse line.

BTW, i have seahorse installed and my ~/.gnupg/gpg.conf is empty.
