I have just found out that it might depend on 2 problems:
1) a well know bug according to which the keyboard layout is not displayed in the applet.

2) the fact that nvidia-xconfig (the one packaged with driver 9631 in Ubuntu) removes the following lines from the Section "Input Device" of xorg.conf (which was not a problem in Ubuntu Edgy):
    Option         "XkbRules" "xorg"
    Option         "XkbModel" "pc105"
    Option         "XkbLayout" "it"
    Option         "XkbOptions" "lv3:ralt_switch"

Anyway I'll set my report as a duplicate of that well known bug
