Easy.  You can do it with either a GUI installer like synaptic, or from
the command line with apt-get.  The packages you'll want are:

kubuntu-artwork-usplash
kubuntu-default-settings
kubuntu-desktop
kubuntu-docs
kubuntu-konqueror-shortcuts

Just install them on top of Edubuntu, and you're on your way.  (Really, you
don't even need all of those.)
