Typically, you simply enter the account, and then the first time you try to
get your mail, it will pop up the password box. At that point, you can
then just enter the password, and click on the checkbox to remember it, if
you want.

Lots of information on Evolution is available:
Go to:
System -> Help and Support
Select Internet -> Send and Receive email
Click on the Evolution pointer, and it'll give you a quick blurb on where
to find it, then a link to the complete manual.
It's 142 pages long, so there should be enough there to get you going. :)
