While Ubuntu is my favorite distro it is not my favorite mail system.

Take a look at http://www.qmailtoaster.com  You can download an ISO that
sets up Centos and builds a qmail based mail server.  Does all the spam
filtering, web mail etc...  Administering mail accounts is done through
a web interface.  Very simple and easy to use.

I've set these up in several small offices.  Works great.
