thank you for opening this bug and helping make Ubuntu better.
Unfortuantely, you do not specify on which version of Ubuntu and
Coreutils you found this.
AT least as of Natty (Ubuntu 11.04), 'dd' does work as expected:
$ dd --version
dd (coreutils) 8.5
Copyright (C) 2010 Free Software Foundation, Inc.
License GPLv3+: GNU GPL version 3 or later <http://gnu.org/licenses/gpl.html>.

and, for 'dd --help':
Usage: dd [OPERAND]...
or: dd OPTION

Bug description:
For dd tool, its not possible to use --version or --help operand, also other things seems broken
like specifying byte size in mega bytes , stats print out, etc... Looks broken.
