This isn't something that the desktop image can support because it works
by simply copying itself to to the hd rather than installing packages.
Use the mini iso if you want this.

Status in “ubiquity” package in Ubuntu:
  Won't Fix

Bug description:
  In the installer you can press F6 to get an option to install "free
  software only".

  I would like there to be an option "Ubuntu Core only" that installs only the Ubuntu Core packages.
  Basically kernel, sh, and apt.
