I have the same problem.

I have 13.10 installed on a VM using VirtualBox.  This VM is single-
boot, but uses lvm with boot on /dev/sda1 and several disks in the lvm.
In particular, root (/) is in the logical volume.  On upgrade to 14.04,
I got the dreaded "symbol 'grub_term_highlight_color' not found" error
and the VM is no longer bootable.  I tracked through several of the
work-arounds, but I have not found instruction on how to mount the (lvm)
root partition when booting a live CD, so I cannot see how to re-install
grub.

I did nothing other than attempt to upgrade to 14.04.  I did not re-
install anything (I have never succeeded in  booting the upgraded
system) and the old system was working fine.  I do not see how this
could be my fault, and I cannot find instructions that I can follow to
repair the upgrade.  (I am a reasonably sophisticated user, but by no
means a system administrator.)

I guess I will have to revert to the 13.10 "snapshot", but I would be
willing to provide any information about the failed system before I do
so.  There is no personal information on this VM, so if you want a copy
(about 10GB) tell me how to give it to you.

Bug description:
  The update from 13.10 to 14.04 via update-manager broke grub for me,
  which resulted in the grub error:

  "symbol 'grub_term_highlight_color' not found"

  on startup.

  To fix the problem I had to boot to my persisting Ubuntu installation
  (e.g. using Super Grub Disk) and had to reinstall grub on my boot
  partition: "sudo grub-install --recheck /dev/sdx"
