Oh and just an additional tidbit in case someone else comes across this
issue, the EFI partition was a handy place to put the BIOS update as the
menu displays that partition as an option to look for the the update
within Intel's Visual BIOS

Title:
[Intel NUC] Cannot boot new UEFI install with Encrypted LVM
Status in “grub2” package in Ubuntu:
Incomplete
Bug description:
I am unable to boot after an UEFI install after choosing the encrypted
LVM options, and opted for a legacy install to get up and running
today. SecureBoot, Fast Boot, etc were all disabled for these
installs.
I've tested this with a brand new NUC with both the Ubuntu Gnome 14.04
and Ubuntu 14.04 desktop installs while writing zeros to the SSD in
between just to make sure there were no lingering issues.
