Well, gosh.  That was EASY!  Here's the simple steps I used to fix this;
the sort of thing any generic user should be able to pull out of thin
air.  The gist is I booted to an xubuntu 14.04 live CD, mounted and
chrooted to my normal system, then ran dpkg-reconfigure and update-grub.
I selected both /dev/sda and /dev/sda1 (I think all I needed was
/dev/sda) on the reconfiguration.

I expect SOMEONE will gripe about running on a root prompt, but that's
been my modus operandi for doing rootish things since K&R invented the
darn thing back when I was a yout.

root at xubuntu:~# cryptsetup luksOpen /dev/sda5 crypt

Bug description:
  The update from 13.10 to 14.04 via update-manager broke grub for me,
  which resulted in the grub error:

  "symbol 'grub_term_highlight_color' not found"

  on startup.

  To fix the problem I had to boot to my persisting Ubuntu installation
  (e.g. using Super Grub Disk) and had to reinstall grub on my boot
  partition: "sudo grub-install --recheck /dev/sdx"
