There are a couple of problems in the log file:

Aug 9 20:49:04 ubuntu kernel: [ 404.047418] perf interrupt took too long (5004 > 5000), lowering kernel.perf_event_max_sample_rate to 25000

Aug 9 20:49:21 ubuntu partman-lvm: 2 logical volume(s) in volume group "ubuntu-vg" now active
Aug 9 20:49:25 ubuntu ubiquity: mount: unknown filesystem type 'crypto_LUKS'
The SQUASHFS errors are indicative of a problem from the USB device you
are using to install Ubuntu, I'd try recreating it.
The other problem is that the disk you are trying to install is a
'crypto_LUKS' device, something which the Ubuntu installer does not yet
support.
