I think this is the option that you want to use to restrict the server
to a minimum protocol version:

https://www.samba.org/samba/docs/man/manpages-3/smb.conf.5.html#SERVERMINPROTOCOL

To fix this bug, the value would need to be "SMB2".

  It'd be nice to make this change early enough that 18.04 LTS does not
