Update the proposed archive, check you got the version below, then purge
your grub packages, and then reinstall the latest version that should
fix your issue.

lead to flickering between graphical and text mode when traversing the
menu. (LP: #1752767)

Bug description:
I have a Nvidia GTX 1070 Ti. Everything was fine on Artful. I decided to update to the Bionic beta to test it. Since then, the grub menu display is fucked up (when I move the highlight with the keyboard arrows, I have the text written twice: one in black and white, one with the purple/violet background and not aligned).
