I don't see any error relating to /cow, but I do see the following:

Oct 19 11:47:41 ubuntu grub-installer: grub-install: warning: this GPT partition label contains no BIOS Boot Partition; embedding won't be possible.
Oct 19 11:47:41 ubuntu grub-installer: grub-install: error: embedding is not possible, but this is required for cross-disk install.
Oct 19 11:47:41 ubuntu grub-installer: error: Running 'grub-install  --force "/dev/sda"' failed.

This seems to be an error due to the partitioning scheme used.

Could you please tell us more about what options you picked in the
installer, and how you did the partitioning?
