Well I've managed to screw up my machine massively and don't know how
to get it back to a sane state.
I deleted what I thought were all traces of 5.0.9 that I had
compiled and re-ran update-grub2, then I installed:
rw-r--r-- 1 nanook rmtonly 10877978 Apr 22 23:20
linux-headers-4.15.18-041518_4.15.18-041518.201804190330_all.deb
-rw-r--r-- 1 nanook rmtonly 1056602 Apr 22 23:20
linux-headers-4.15.18-041518-generic_4.15.18-041518.201804190330_amd64.deb
-rw-r--r-- 1 nanook rmtonly 1059488 Apr 22 23:20

linux-image-4.15.18-041518-lowlatency_4.15.18-041518.201804190330_amd64.deb
And ran another update-grub2 with the following output:
ourcing file `/etc/default/grub'
Sourcing file `/etc/default/grub.d/init-select.cfg'
Generating grub configuration file ...
Found linux image: /boot/vmlinuz-5.0.0-13-lowlatency

So I expected to see 4.15 generic and low latency in addition to
5.0.0-13-lowlatency in my boot menu, but instead I see 5.0.9 (which even though
I've removed vmlinux-5.0.9 starts to boot) and 5.0.13, 4.15.18 doesn't show
up.
