I notice the following messages in your installer log:
Dec 28 08:39:13 ubuntu kernel: [ 142.823161] SQUASHFS error: zlib decompression failed, data probably corrupt
Dec 28 08:39:13 ubuntu kernel: [ 142.823164] SQUASHFS error: squashfs_read_data failed to read block 0xce60b06
Dec 28 08:39:13 ubuntu kernel: [ 142.823734] SQUASHFS error: zlib decompression failed, data probably corrupt
Dec 28 08:39:13 ubuntu kernel: [ 142.823735] SQUASHFS error: squashfs_read_data failed to read block 0xce60b06
It's possible you have a bad write to your media. Please try the option
to check the integrity of the image from the installer boot menu, and if
this confirms that the media is corrupt, try rewriting it.
