So the status of this is that it is landed in subiquity master and is
being included in the eoan images (but not yet the bionic ones). If you
are one of the people waiting for this feature, please grab yourself an
ISO from http://cdimage.ubuntu.com/ubuntu-server/daily-live/pending/ and
try it out (on systems with backed up data only at this stage please!).

Bug description:
  subiquity currently totally ignores the current partitions on the
  disk. That's probably not ideal.
