The error in your upgrade log is:

Configurando grub-efi-amd64-signed (1.167+2.04-1ubuntu44) ...
/boot/vmlinuz-5.11.0-16.1-liquorix-amd64 is unsigned.
E: Your kernels are not signed with a key known to your firmware. This system will fail to boot in a Secure Boot environment.

The problem is as the message says. You have installed a third-party
kernel, which is incompatible with SecureBoot.

Your dmesg also shows that you do have SecureBoot enabled:

may 13 10:55:21 mario-X580VD kernel: secureboot: Secure boot enabled

so, this system will fail to boot because you are using an unofficial
kernel.

It is absolutely correct in this case for grub to error out and avoid
regenerating a grub config that points at a kernel that can't be booted.
