The error in your upgrade log is:

E: Your kernels are not signed with a key known to your firmware. This system will fail to boot in a Secure Boot environment.
The problem is as the message says. You have installed a third-party
kernel, which is incompatible with SecureBoot.
Your dmesg also shows that you do have SecureBoot enabled:

so, this system will fail to boot because you are using an unofficial
kernel.
It is absolutely correct in this case for grub to error out and avoid
regenerating a grub config that points at a kernel that can't be booted.
