I think the reason why fonts-droid-fallback is installed by default is
this dependency chain:
ubuntu-desktop -> ghostscript-x -> ghostscript -> libgs10 ->
libgs10-common -> (recommends) fonts-droid-fallback
A fragile workaround might be to somehow stop fonts-droid-fallback from
being pulled (change libgs10-common so it Suggests instead of Recommends
fonts-droid-fallback). Or maybe we could drop the font configuration
file from the fonts-droid-fallback package.
OTOH, neither would address the root cause — why do the snaps behave as
they do with respect to font configuration?

default font is chosen to AR PL UMing CN, which is very ugly.
