The desktop installer ISOs are being built by livecd-rootfs + debian-cd.
That being said, the arm64 images are highly experimental. I don't think they got much attention recently.

Bug description:
  When booting Mantic arm64 desktop daily ISO (dated 2023-09-03 07:02), live environment not started, instead - graphical login requires username/password (ubuntu/mantic user not accepted).
  ISO being installed on Virtual Machine - Parallels Desktop, Mac Studio M1 Max
