Note that with an install of 24.04 server which upgraded to the latest
subiquity installer automatically I got exactly the same behaviour.
When attempting to create a volume group the list of devices has no text
in it, even though you can still tab through and select whatever it is.
Had to resort to creating my entire LVM configuration manually on the
CLI and then just choosing the appropriate volumes to use in the
installer.

Bug description:
Booted ubuntu installer live iso, got as far as "Create LVM volume
group", which presents a list of Devices which are invisible. The tab
key clearly steps through the invisible devices, but as they are
invisible i cant see which to choose. As a sometimes workaround, by
hitting the spacebar on each invisible choice, the size is shown, and
i can sometimes deduce from that which device it is, tho if several
devices are the same size even that doesn't help.
