Sorry for the delay! Life got in the way.
Here's a fresh pmbootstrap with the log, what I understand is pmbootstrap first asks sudo for privileges, then later on it chroots to and starts building the target image, there's when the error pops up.

Bug description:
Summary: pmbootstrap (PostmarketOS build tool) fails if the host has
sudo-rs, but works fine if run through sudo-ws.
So, pmbootstrap creates and initializes a image to be flashed unto a
mobile device. this tool at some point asks for the image's user
password and loops until ctrl+c with this error:

if the system is using sudo-rs as default. If I remove it, the sudo-ws
takes its place and pmbotstrap can set up the image's password just
fine:
