According to the Debian bug, this has been fixed in os-prober 1.72,
which is available from Bionic onwards:

  Requesting for update to be applied and be available for Trusty and
  Xenial.

  os-prober makes partitions read only whilst it scans them, this can
  cause corruption and loss of service in some uses cases. For example
  Ceph OSD's are taken offline if journal write happens as same time as
  os-probe. A Ceph cluster under heavy load will experience large
  numbers of crashing OSD's if update-grub is run.

  There are also reports of LVM volumes and KVM guests becoming
  corrupted
