It took a while to better understand the root cause,
but it turns out that there is an issue in the sequence of cmd-line calls that handle the disk configuration (partitioning, formatting, mounting).

Based on that, there is fortunately an easy workaround that helps to
unblock, and this is to specify the root partition as last partition in
the installer's disk configuration screen, i.e. have /boot and swap
before root (I tested this and it worked in my cases).

That said, this is not considered release blocking,
but on short term it will be added as 'known issue' in the release notes
and then fixed post GA.
