Hello Daniel,
I am afraid that this is intentional.
The GRUB version we shipped in Questing is a pre-release git snapshot of
the than upcoming GRUB 2.14, as such the "upstream" version is accurate.
26.04 LTS will ship the final GRUB 2.14 which will not have such a
marker and will accurately say "2.14".

Bug description:
Ubuntu 25.10's GRUB menu wrongfully displays the Git version. This
scares less-technical people. It didn't on 24.04, where it simply said
"GNU GRUB version 2.12". I see "GNU GRUB version
2.14~git20250718.0e36779". Continued from
