Deploying multiple applications to a single environment?

That's definitely one way to split up environments. But you could also
divide up production environments as well, say:

environments:
  production-team-1:
  production-team-2:
  qa-team:
  development:
  staging:
...

etc. There really is no limit to how many environments you have, or what
you have running in those environments in the eyes of Juju.
