I usually have a 100 MB partition in the beginning of my disk for both windows
boot (c: with boot.ini) and linux /boot to minimize the number of partitions.
But the ubuntu kernel installer can't cope with /boot beeing on a symlink-less
filesystem, and fails horribly to configure itself. It should be prepared for
this use-case and handle it reasonably well, probably overwriting a file like
vmlinuz-breezy or vmlinuz-5.10 with the latest kernel to keep the system
bootable and updated.
