I've just installed a HP DL160 machine and it's works perfectly if I remove plymouth package (BTW why is it installed by default on a server?).
It has a Matrox G200 VGA card, I don't know whether it matters. DL380 has ATI.

If I remove plymouth on DL 380 _sometimes_ I don't know why, I see the
boot messages and the login prompt for a moment and it losts the signal
only after that. Unfortunately I really don't see, what it depends on.
