I am having similar probem.
Cant change any file association from system settings in jaunty. 
When i change the priority of file association of a filetype (mp3 which is currently associated first with audacity and i want to change to mplayer) i can get to move the priority, when i press apply the  update dialog shows up and gets to about 15% the disapears a the same time as i see the listo go back to the order it had before.

tried sudo systemsettings , thinking it might be a permission issue but
had the exact same result.
