Hello Harold,
You can load Kubuntu desktop and have it function as
a NFS file server if you want. If you have Wind0w$
and Linux then you should setup Samba and SWAT. What
others have highlighted is that Ubuntu server does not
come with a desktop environment, applications and GUI
tools to manage as Kubuntu/Ubuntu desktop distros do.
Additionally there are additional security issues
introduced into the equation if you run a desktop as a
"server." If you want to have a GUI access to CD/DVD
burning on that box you can load VNC and run the box
headless (sans monitor) and connect to it over your
internal network. If its just in your own home network
behind a firewall then do what is best for you. Thats
why FOSS is so kewl you can do what you like and
customize to your hearts content.
Over time you will become more familiar and
comfortable with the CLI and it will be much less
intimidating. Don't be intimidated just try it and
you will learn. You can always practice with virtual
machines as well. If all of this sounds to annoying
to setup you can also check out freenas cuz its got a
simple web gui.

Which are not that hard. Search for cdrecord .
However, you *can*
run
a file server in addition to a GUI. You'll have a
performance loss,
but
it's probably doable unless these computers are very
old.
