thunderbird is haunted ?

I'm not sure, but you could be pressing a keyboard shortcut to send
by accident. To help accidentally sending, look in
Edit / Preferences / Composition / General
and enable the option
"Confirm when using keyboard shortcut to send message"

Maybe that will help you diagnose too.

in the shortcuts for "Linux"
there is "Send Message Now", set to "Ctrl + Enter".
I can see how you could easily press that by mistake.

I can't see anywhere you can configure it.
Maybe it's a built-in shortcut ?
