I use faubackup, which is a command line utility. It does incremental
backups to disk, hardlinking the files which are identical.
Configuring it requires editing a text file, but all options seemed to me to
be rather straightforward.
So you can always browse the backup image you have using the shell or GUI.
The best way to get stuff to be backed up in time intervals is to use cron.
