It is quite strange it is not install. You could try gksu instead of gksudo:
gksu gedit /etc/network/interfaces
If it is not install as well, then use sudo nano:
sudo nano /etc/network/interfaces
add:
auto eth2
iface eth2 inet dhcp
after that <ctrl> O to save it, and <ctrl>x to exit nano.
then run in terminal
sudo /etc/init.d/networking restart.
