GNOME in a snap?

As Zygmunt said, the snap interface mechanism should cover exporting
everything a GNOME app needs, and in fact I would very much like to see
Ubuntu GNOME exploring snaps as a way to deliver newer GNOME apps on
older releases of Ubuntu, much as the Kubuntu folks are planning. In
that case, the 16.04 deb-based core GNOME services (logind /
accountservices) would be exposed to snaps through a declared interface.

Tim raises a more complicated and question, which AIUI is making a snap
of newer versions of those core GNOME services (rather than snaps of
newer GNOME *apps*).

In principle, yes, the same mechanisms would enable a GNOME-core snap to
be exposed to GNOME-app snaps. The main question would be if / how that
would conflict with the Ubuntu GNOME deb-based services.
