I have an ubuntu 18.04 type of linux.
How may I make a live image of my current system, or is that possible?
I hear there is a program called
pinguy
but when I used
sudo apt-get install pinguybuilder
that did not work.

You should have access to Clonezilla. I believe that will do what you need, though I have little experience with it. I believe it runs from a terminal.

seems the ubuntu server dvd lacks accessibility

seems debian is the only dist that care of accessibility..
