Ubuntu on an IPAQ?

Ubuntu is not designed for embedded devices like a PDA, but one of the best 
things about GNU/Linux is that different distributions can be created to suit 
specific needs. There are several distributions made especially for handheld 
embedded devices, like Familiar[1] and OpenZaurus[2]. Not being a PDA owner, 
I have not tried them myself. My understanding is that they are not as mature 
as the software that comes pre-installed on the devices.

There are also some devices that ship with Linux out of the box (and hence 
work properly). The GP2x portable games console and Nokia's 770 and N800 come 
to mind.
