You should check out the 64-bit section of ubuntuforums.org if you 
haven't already, which has many threads and a sticky which deals with 
this question.

Basically, if you want to run 64-bit Ubuntu, you need to do a few 
workarounds to get some popular software to work properly, like browser 
plugins. This is because 64-bit versions of these things are not 
available yet.

I ran 64-bit Ubuntu for the Edgy release, just to try it out (Athlon64 
X2 4200). But I didn't notice much performance difference. And what with 
the extra work involved in getting things set up, and keeping them that 
way, I decided it wasn't really worth it.

But if you enjoy a little bit of extra hacking, then go for it.
