What mail servers to install might depend on what your needs are. For
SMTP, most people use Postfix (which is the default MTA for Ubuntu, but
exim is also supported). For POP3 and/or IMAP there are also several
choices, but Dovecot and Courier are supported by Ubuntu (meaning that
they are in the 'main' repository).
Remember that all those are mail servers, not groupware servers (with
calendering, etc.) like Exchange.

If you want anonymous FTP, that might be an option in the configuration
file that you need to change.
What FTP server did you install? (The default, supported FTP server for
Ubuntu is 'vsftpd'.)
BTW: if you want to transport files between your desktop and the server,
you might want to use ssh/scp/sftp instead (FTP should only be used for
anonymous downloads or if security is not important).

I think that works only for some configurations, e.g. it might depend on
the way you do authentication (but I have no experience with it).
Of course you need the 'evolution-exchange' plugin (but I think that's
installed by default?).
