Looks like upstream bug
https://bugzilla.gnome.org/show_bug.cgi?id=693988 covers at least the
part about "the volume control indicator controls the builtin audio, not
the Bluetooth device". The part about forgetting the volume is not
covered (I don't know whether that would be a feature request).
