No cron você pode por assim:
comando > /var/log/comando.log
ou
comando 1> /var/log/comando.log
ou
comando 2> /var/log/comando.log
ou ainda
comando > /var/log/comando.log &

Instale o Gnome Schedule, é muito bom.
