How do I create a backup image of my server?

I always thought that a Linux user was anyone that used Linux.
I've used Mondo and recovered a number of servers successfully and fairly
quickly. It's a good solution in some situations but in most cases, it's
usually one database, folder or application that needs to be recovered in
which case each application can manage it's own backup requirements using
it's own native tools.
