Ubuntu Server 8.10 for a public unix server?

Good evening,

I've been working at my school for the Electronic and programmer
department and one of the teacher asked me if I could build a public
*Nix access server that could be use to help the programmer to develop
embedded linux os.

My hardward consist of a Pentium 4 2.8 gHz with 2 320GB SATA drive and
one IBM eServer (dual P3 700 mHz with some crazy raid array).

My plan is to use both machine to run VPS. why VPS? well, I need a
environment where the student can have root access but I don't want them
to fuck up the whole thing. I would centralise the user data and login
on one machine so everyone can go one any VPS.

I've been think about using Gentoo hardenned for this small project but
I've recently notice that Ubuntu Server already have a lot of
visualization already build in.

So, I am asking you guy what would be the best solution. Should I
continue to work my way up with Gentoo (I still haven't figured out how
the VPS works on Gentoo) or wait the couple days until Ubuntu Intrepid
Ibex is out and use this instead?

note: It have to be easy for the end user to work with it.
Administration wise, I don't really mind.
