That is odd. I just had to install pidgin.
empathy is a mixed bag -- I like the added video conference and desktop
sharing stuff, but some stuff is a step back from pidgin -- and I wasn't
exactly in love with pidgin.
One empathy problem I am having is connecting to a jabber account. It is
telling me authentication is failing. Did some googling and there is a bug
related to this. Has anyone here managed to connect to jabber accounts
with karmic empathy?

I had something similar. I thought in my case it hadn't updated the
package lists initially, hence did not know about the extra updates.
