I've just had much success with Exchange and Evolution on Ubuntu 9.10
using the evolution-mapi package:

Once this was installed there was a new Server Type when adding a new
mail account ("Exchange MAPI" I think), and that automatically provided
access to the Exchange message store, the address book, and the
calendar.  

The calendar is a bit flaky (can't create repeating appointments, and
existing repeating appointments don't appear but still give
notifications).  All in all, most usable for 95% of my office needs.
