On a default Gnome/Unity install, the screensaver system doesn't use
xscreensaver, but gnome-screensaver. This doesn't depend on the
xscreensaver daemon, so it doesn't normally get started. The
screensavers are defined in Gnome in their own screensaver properties
instead of the xscreensaver-demo application.
As a workaround, you may wish to add xscreensaver to Startup
Applications. (search for "startup" in the Unity Dash, or go to the
Gnome control center and click "Startup Applications". It can also be
started on a terminal with "gnome-session-properties")
