I had the same problem.  I was playing with the compiz settings, pressed the
'reset everything' in the unity profile and since then have had no panels.

Too bad, because I was actually really enjoying unity.   I'll let you know
if I figure out a simple way to get the panels back.

I think I like unity because:

a. I like to use the keyboard to do most of my navigation and the keyboard
support is pretty good.
b. I like compiz and unity sits on top of compiz
c. The dash behaves a bit like gnome-do on steroids
d. I love the latest gnome software centre, I see much less aptitude use in
my future.
e. I like a change in my window environment from time to time.

The down side is that it is a bit(?) buggy.   By the next release I think it
should be a pretty slick interface.   It is a hard call for Ubuntu on when
to release stuff like this -- too early and it sucks for everyone, but if
you don't push it out you never get the bug reports.
